Veggie Loaded Potato Breakfast Bake

every yr on Thanksgiving and christmas I try and make a healthy, but holiday worthy tasty, breakfast bake for the morning.  On those indulgent days, I try and help myself and my circle of relatives get in a few greens and protein inside the morning because lord is aware of the relaxation of the day is a crap shoot.  So at the least I realize there is one “on target” meal amidst all the vacation sugar.

  • .75 lb baby potatoes new or pink

  4. at the same time as potatoes and broccoli are cooking, prepare dinner the breakfast sausage.  add chopped onion to big nonstick skillet with 1 tbsp avocado oil, saute till translucent, about 1-2 minutes.  upload floor breakfast sausage and prepare dinner it all the way via.  
  5. when the potatoes and broccoli are performed, unfold them frivolously on the bottom of the casserole.  next add peppers, tomatoes, and spinach.  Then add the breakfast chook sausage.  
  6. Whisk 12 eggs together with 1 tsp garlic powder, 1 tsp onion powder, 1/4tsp salt, and 1/8 tsp black pepper.  Pour whisked eggs over the casserole.  
  7. gently move veggies in egg mixture to make sure the whole thing is absolutely covered.  Bake for 45-fifty five mins, or until eggs are set.  allow cool 10 mins before serving!pray
